Both hold the same food-grade nitrous oxide — the difference is how much, and how you connect it. Standard 8.2g cream chargers screw straight into a whipper one at a time, which is perfect for home kitchens and cafés making a few batches a day. Once you’re whipping all day, a large nang tank — 3.3L up to 4.6L — holds hundreds of chargers’ worth in one cylinder and works out cheaper per gram.
